Food always lightens the mood. I love to have colorful food; it looks so much more appetizing. I have been trying to eat extra healthy this week, making sure I drink all eight glasses of water, cutting down on the WHITE rice and I made this for lunch.

Something small, but VERY tasty.

*Added: some chicken breast, some fresh basil, some green onions, some sweet bell peppers, a few drops of soy sauce and some GARLIC--nothing fancy!
